Labyrinth Reopens After Remodeling
Thurston Terrace is once again a solution to your caffeine fix.
Earlier this month, the Labyrinth Press Company reopened at 12 E. Fourth St. The business will only be serving drinks – coffee, tea and fruit smoothies – to start. The Labyrinth is open 8 a.m. to 4 p.m. Monday through Friday.
Jeff James, Labyrinth owner, said in a couple weeks they plan to start serving ”classic” menu items again in the newly renovated cafe and restaurant. For now, though, James is excited to be able to provide patrons their favorite caffeinated drinks.
”It feels really good. I love having conversations with the customers,” he said. ”To me, it didn’t feel like we were closed for that long, but the customers are reminding me that it was two years, and how much they missed our drinks.”
The restaurant was closed down for two years to expand the kitchen area, add more restaurant seating and to redesign the customer flow around the drinks counter.
”With the new layout, we will be able to have better customer flow. No more lines out the door,” he said.
James said the kitchen has tripled in size, with more room for preparing meals and taking large orders. He said there is a new walk-in cooler, which allows them to receive food from larger distributors. He added they still get their organic food locally. The renovation work done in the kitchen was mostly performed by James.
”I put in 6,000 subway tiles,” James said. ”I did all the work myself that I could.”
In the dining room, James said they will utilize the stage for seating in the restaurant area during the day. At night, the stage will be used for performers. Once food returns, the menu will be available for both Brazil Craft Beer & Wine Lounge and Labyrinth, with a specialized appetizer menu for Brazil. James, along with Thurston Development Inc. business partners, Frank Besse and his wife, Alexandria, control both the Labyrinth and Brazil, which is located at 10 E. Fourth St.
With the new kitchen, James said they can cook just about anything, will be preparing their own bread and providing pretzels to Brazil. The food will still be all vegetarian and vegan diet friendly.
