Let’s Talk Thanksgiving Turkey

We all know that the turkey takes center stage on our Thanksgiving table and on our plates this holiday season.

Here are some tips to safely handle and cook your holiday bird to keep your Thanksgiving meal safe and delicious!

Allow 24 hours of thaw time in the refrigerator for every 4-5 pounds of bird. It is safe to store in the refrigerator for an additional 24 to 48 hours before cooking. In preparing your turkey, keep in mind that the bacteria on and in your bird cannot be washed off. So, do not wash your turkey. Cooking is the only way to destroy potentially dangerous bacteria. While dressing the bird, wash hands frequently. Keep the raw turkey separate from other Thanksgiving dinner treats by using a separate cutting board, knives, and other utensils. Wash the counter and anything that touched raw meat with soap and water before preparing other foods in your Thanksgiving meal.

Be sure to cook your turkey, and any stuffing in the turkey, to 165 degrees Fahrenheit. To ensure it has reached an appropriate temperature, take the temperature in three areas: the thickest part of the breast, the innermost part of the wing, and the innermost part of the thigh. Remember to allow the turkey to sit at room temperature for 20 minutes before carving to let the juices settle.

Now, take your time and enjoy that delicious turkey. Just be sure to refrigerate leftovers within two hours. You can keep leftovers safely in the fridge for three or four days, so the Monday after Thanksgiving is the last day food is safe to consume from the fridge. However, you can freeze your Thanksgiving leftovers. Be sure to use frozen leftovers within two to six months for best quality. Be sure to reheat leftover foods thoroughly to 165 degree Fahrenheit. Remember, bacteria that causes foodborne illness can not be smelled or tasted!
