Coming from a farming background, I viewed the possibility that yogurt production held for a revitalization of currently defunct family dairy farms as a positive. Unfortunately, I too question the wisdom of making such a startup investment on the basis of one product, especially when considering the fickle/fad nature of dietary trends. Consider for example the boom in specialty " bread store" franchises back a decade, or so, ago and what happened to so many of them when that great "carbohydrate scare" developed & spread across the nation almost overnight. Who would have ever thought that the consumption of "wholesome" bread products would be viewed as a negative!?

From what I understand, these new plants are making greek yogurt, which is great stuff. Right now greek yogurt is hot but once the trend fades, the product demand may go down a lot. It's difficult to know if this is a long term industry.
