MAYVILLE - La Fleur has been honored once again for providing a true dining experience.
The restaurant, which specializes in French cuisine, has received its sixth Four Diamond Award from AAA. The restaurant received the award for the first time in 2007. Jonathan Haloua, La Fleur executive chef, said La Fleur was the first and is the only restaurant in Western New York to receive the award.
''We are always anxious to get the news. Being that we are a seasonal restaurant, we face the challenge of training new staff every year in a short period of time and to get to the level of service that our guests are expecting,'' Haloua said. ''Also, as a reminder, AAA conducts their inspection incognito. We never know when an inspector will show or if they have already visited our restaurant. We must be at our best every time and all the time.''

La Fleur is located at 5031 W. Lake Road, Mayville. According to a news release from AAA, the restaurant earned the Four Diamond Award for excellent service, opulent decor and outstanding cuisine.
''Area diners can enjoy the French-country farmhouse setting. Superb classic and new French cuisine are packed with powerful and intense flavors - a reflection of the chef's passion,'' AAA officials said. ''Absolutely the freshest and finest ingredients, some organic, garnered from across the globe and from the restaurant's own garden are featured. Dense breads and luscious desserts are made daily.''
Haloua said attention to details, when it comes to both the food and the atmosphere is why La Fleur receives recognition.
''At La Fleur, we provide what I consider a true dining experience,'' he said. ''First, the decor and the attention to details will appear clearly to our guests. We strive hard to maintain the property and garden pristine every summer. The entire staff works together to provide the best service. Everyone is here to help you and answer any demands. We also make everything in-house, from our amuses-bouches to the desserts, and ice cream and sorbet. We offer a weekly tasting menu based on the seasonal ingredients that we have sourced from the local farms. We also offer the largest wine list in the region, with a great selection of French, Californian and local wines.''
The restaurant has also received an unofficial rating of 10 by Tim and Nina Zagat from the Zagat restaurant guide. The rating is unofficial because Zagat does not have an edition for the region.
''We are still pretty happy, because 10 is the highest rating, and the Zagats took the time and effort to put it in writing and take a picture with our staff,'' Haloua said.
The restaurant first opened in the summer of 2002. Haloua said it is great to be known for providing a great dining experience.
''We knew that there was a need for a fine dining destination on Chautauqua Lake, but we didn't think that we would become such a dining destination with people driving over five hours just to dine at La Fleur,'' he said. ''It's great to know that we are bringing 'foodies' to the region and that they get to discover Chautauqua.''

La Fleur joins a select group of Four Diamond winners. Just 3.9 percent of the 59,000 AAA diamond-rated lodging facilities and restaurants were awarded AAA Four Diamond designation for the past 12 months. The total of 2,289 recipients included 1,535 hotels and 754 restaurants.
