White Carrot Reopens In Mayville
Brian Kiendl, owner of The White Carrot in Mayville, said the restaurant was closed for a brief break beginning on Jan. 1, but recently threw open the doors on Feb. 9. The farm-to-table style restaurant has been doing very well, and is looking to continue the trend, Kiendl said.
“Things are going great,” he said. “I couldn’t have asked for a better start.”
The restaurant officially opened Sept. 2, 2016, and offers fresh meal options right from the garden. Kiendl said he started out with one greenhouse, but is looking to expand in the future. A large garden covers half-an-acre which supplies much of the produce used by the restaurant. Kiendl said he has plans of planting fruit trees as well, and chickens should arrive in the spring.
A big part of the farm-to-table focus is sourcing items responsibly. If certain ingredients or other needs are not met by what is on the grounds, Kiendl said he enjoys working with local farmers and other businesses. The restaurant is working with Bag and String Wine Merchants for wines, which has been a great partnership, he said.
Kiendl said he has been cooking for around 10 years, and his first jobs was washing dishes in a kitchen at the age of 15. He’s been in the kitchen for quite some time.
At his restaurant, Kiendl takes that knowledge and applies it to provide a dining experience for his guests.
“Our servers try to be very subtle,” he said. “They aren’t going to be bothering our guests.”
In the same vein, Kiendl said the restaurant is going to offer a special event every month beginning in March. The “Wine and Dine” dinners will feature an eight or nine course meal with each course paired with a wine. In the summer months, Kiendl said it is possible a “Wine and Dine” dinner will be held in the restaurant’s garden.
“(Patrons) aren’t just coming here for dinner,” he said. “They’re coming here for an experience. If we’re going to do this, we’re going to do it right.”
He said it takes a lot of effort and dedication, which his staff has provided, adding the staff has done a tremendous job.
The White Carrot is located at 4717 Chautauqua Stedman Road in Mayville. Currently, it is open Wednesday through Saturday from 5:30 – 9 p.m. and serves dinner only. The last reservation is generally taken at 8:30 p.m.
